Sweet Potato – Beauregard Sweet Potato – Ipomoea batatus –
I. batatas – Sweet Potato – Tuberous perennial climber with fleshy, purple stem and heart shaped to ovate, entire, toothed, or 3 lobed leaves, 2-4″ long. In summer it produces trumpet shaped, lavender to pale purple flowers, to 1″ inch across, with the base of the tubes darker or sometimes white.
grow in moderately fertile, well drained soil in full sun. Matures in 90 days. Harvest from end of vines before frost. Use a digging fork around primary crown loosen dirt and hand pick sweet potatoes.
prone to white blister, rust, fungal leaf spots, stem rot, thread blight, charcoal rot, and wilt.
